This makes a different and tasty salad. If you don’t like the crunch of raw onions, saute or steam the chopped onions before adding them to the mixture. I like to use sharp cheddar cheese, but you can use any cheese you like.
Green Pea Salad
2 cups cooked or canned peas 1/2 cup shredded cheese
1/2 cup finely chopped celery 1/2 cup finely chopped pickles
1/2 cup finely chopped onion 2 tablespoons chopped pimento
2 hard-boiled eggs, chopped 1/2 teaspoon salt
mayonnaise, as needed
Mix the vegetables and seasonings together and chill. Just before serving, toss with mayonnaise.
