Chocolate Sauerkraut Cake

A most unusual cake, but very good. This was developed by poor country people who had no money for coconut and did have plenty of homemade sauerkraut.  Make sure you chop the sauerkraut into fine pieces.  Because of the sauerkraut, this cake keeps well and stays moist.


2/3 cup butter

1 & 1/2 cups sugar

3 eggs

1 teaspoon vanilla

2/3 cup sauerkraut

2 & 1/4 cups flour

1/2 cup cocoa

1 teaspoon baking powder

1 teaspoon soda

1/4 teaspoon salt

1 cup water

Rinse the sauerkraut well in a colander under running water, then let it drain.  Chop it finely and set aside.

Sift together the flour, cocoa, baking powder, soda, and salt.  Cream the butter and sugar together in a large bowl.

Add the dry ingredients alternately with the water to the creamed mixture.  Stir in the chopped sauerkraut and pour into two 8-inch cake pans.  Bake at 350F for 30 minutes.  Ice with a chocolate frosting.
